- 4 tbsp unsalted butter divided
Potatoes
- 1 lb Yukon Gold potatoes diced into ½-inch cubes
- 4 cloves garlic minced
- 1 tsp dried rosemary
- 1 tsp dried oregano
- ½ tsp kosher salt
- ½ tsp ground black pepper
Steak
- 1½ lb sirloin steak cut into 1-inch cubes
- fresh parsley chopped, for garnish (optional)
Heat a cast iron skillet over medium-high heat. Add 1 tablespoon olive oil and 2 tablespoons unsalted butter. Let the butter melt fully.
Add diced Yukon Gold potatoes, minced garlic, dried rosemary, dried oregano, kosher salt, and ground black pepper to the skillet.
Let the potatoes cook for 4 minutes undisturbed to develop a crust. Stir gently and cook another 3–4 minutes until fork-tender. Remove and set aside.
Increase heat to high. Add the remaining 2 tablespoons butter to the skillet.
Add steak cubes in a single layer. Cook for 1 minute without stirring to get a nice sear. Flip or stir and cook another 1–2 minutes to desired doneness.
Return cooked potatoes to the skillet. Toss everything together, ensuring the garlic butter sauce coats both the steak and potatoes.
Garnish with freshly chopped parsley, serve warm, and enjoy!
