Ingredients
  

Ingredients for Pancake Bread Recipe

  • 2 cups all-purpose flour
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • ½ cup pancake mix
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ½ cup sour cream
  • ¼ cup buttermilk
  • ½ cup unsalted butter softened
  • 1 teaspoon vanilla extract
  • 2 tablespoons maple syrup
  • 1 tablespoon malted milk powder optional
  • 2 large eggs

For the Crumb Topping (Optional):

  • 3 tablespoons all-purpose flour
  • 2 tablespoons brown sugar
  • Pinch of salt
  • ½ teaspoon ground cinnamon optional
  • 2 tablespoons chilled butter

Instructions
 

Step 1: Preheat Oven & Prepare Loaf Pan

  • Preheat oven to 350°F (175°C).
  • Grease a loaf pan with baking spray or line it with parchment paper.

Step 2: Mix Dry Ingredients

  • In a medium bowl, whisk together flour, pancake mix, baking powder, baking soda, salt, cinnamon, and malted milk powder (if using). Set aside.

Step 3: Cream Butter and Sugar

  • In a mixing bowl, beat butter, granulated sugar, and brown sugar until smooth and creamy (about 3-5 minutes).

Step 4: Add Liquid Ingredients

  • Beat in eggs one at a time.
  • Mix in sour cream, buttermilk, vanilla extract, and maple syrup until combined.

Step 5: Combine Wet & Dry Mixtures

  • Gradually mix dry ingredients into the wet ingredients, stirring until just combined. Do not overmix.

Step 6: Make the Crumb Topping (Optional)

  • In a small bowl, mix flour, brown sugar, salt, and cinnamon.
  • Cut in chilled butter with a fork until crumbs form.

Step 7: Bake the Pancake Bread

  • Pour batter into the prepared loaf pan.
  • Sprinkle crumb topping evenly (if using).
  • Bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean.

Step 8: Cool & Slice

  • Let the loaf cool in the pan for 10-15 minutes.
  • Run a butter knife around the edges, then remove the bread from the pan.
  • Cool completely on a wire rack before slicing.
