Ingredients for Pancake Bread Recipe
- 2 cups all-purpose flour
- ¾ cup granulated sugar
- ¼ cup brown sugar
- ½ cup pancake mix
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon ground cinnamon
- ½ cup sour cream
- ¼ cup buttermilk
- ½ cup unsalted butter softened
- 1 teaspoon vanilla extract
- 2 tablespoons maple syrup
- 1 tablespoon malted milk powder optional
- 2 large eggs
For the Crumb Topping (Optional):
- 3 tablespoons all-purpose flour
- 2 tablespoons brown sugar
- Pinch of salt
- ½ teaspoon ground cinnamon optional
- 2 tablespoons chilled butter
Step 1: Preheat Oven & Prepare Loaf Pan
Step 2: Mix Dry Ingredients
In a medium bowl, whisk together flour, pancake mix, baking powder, baking soda, salt, cinnamon, and malted milk powder (if using). Set aside.
Step 3: Cream Butter and Sugar
In a mixing bowl, beat butter, granulated sugar, and brown sugar until smooth and creamy (about 3-5 minutes).
Step 4: Add Liquid Ingredients
Beat in eggs one at a time.
Mix in sour cream, buttermilk, vanilla extract, and maple syrup until combined.

In a small bowl, mix flour, brown sugar, salt, and cinnamon.
Cut in chilled butter with a fork until crumbs form.
Step 7: Bake the Pancake Bread
Pour batter into the prepared loaf pan.
Sprinkle crumb topping evenly (if using).
Bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean.
Step 8: Cool & Slice
Let the loaf cool in the pan for 10-15 minutes.
Run a butter knife around the edges, then remove the bread from the pan.
Cool completely on a wire rack before slicing.
