  • 2 cups pancake mix like Kodiak Cakes Mix
  • 1.5 cups water
  • 12 pre-cooked sausage links chopped into small pieces

Instructions
 

  • Preheat oven to 350°F (175°C). Spray a 12-cup muffin tin with cooking spray.
  • Combine pancake mix and water in a mixing bowl. Stir gently until just combined—do not overmix.
  • Chop the sausage links into small, bite-sized pieces.
  • Stir about ¾ of the sausage pieces into the pancake batter.
  • Pour the batter evenly into the muffin tin cups, filling each about ¾ full.
  • Sprinkle the remaining sausage pieces on top of each cup.
  • Bake for 20 minutes, or until the centers are set and a toothpick comes out clean.
  • Let cool slightly, serve warm with syrup if desired.

Notes

These bites are great for breakfast meal prep. Store in an airtight container in the fridge for up to 5 days. You can eat them hot or cold, and they reheat well in the microwave. 3 bites equal 1 serving.
