Main Ingredients
- 2 cups pancake mix like Kodiak Cakes Mix
- 1.5 cups water
- 12 pre-cooked sausage links chopped into small pieces
Preheat oven to 350°F (175°C). Spray a 12-cup muffin tin with cooking spray.
Combine pancake mix and water in a mixing bowl. Stir gently until just combined—do not overmix.
Chop the sausage links into small, bite-sized pieces.
Stir about ¾ of the sausage pieces into the pancake batter.
Pour the batter evenly into the muffin tin cups, filling each about ¾ full.
Sprinkle the remaining sausage pieces on top of each cup.
Bake for 20 minutes, or until the centers are set and a toothpick comes out clean.
Let cool slightly, serve warm with syrup if desired.
